Questions and answers about alternatives to yeast in baking

I am yeast-intolerant. What alternatives can I use in baking?

  • Tartaric acid baking powder (gluten-free), available from health food stores. Dosage: 3.5 g to 100 g flour
  • Gluten-free baking powder
  • Pre-gelatinised rice flour
  • Arrowroot. 3 g / 100 g flour
  • Pectin (fruity flavour). But: not all pectins are gluten-free. 2 g / 100 g flour.
